The Wine
The first release of our BIANCO is a blend of Garganega and wild barrel fermented Verduzzo; a lesser known Italian variety that packs a lot weight and savoury phenolics. Its a wine style that is designed for summer drinking with fresh seafood and healthy salads. With aromas of peach blossom and almond followed by flavours of lite apricot and baked golden apples.

Winemaking
I have always enjoyed drinking the savoury textural wines of Northern Italy namely Soave from the Verona region which is the home of Romeo and Juliet. The main variety used is these wines
is Garganega: Pronounced Gar – Gan – E – Ga.

Viticulture
The fruit was crushed and de-stemmed, chilled, and the free-run and very gentle juice pressings were separated, settled overnight and the with the Garganega fermented in French oak barrels
before spending 6 months on its own lees. The Verduzzo was fermented to dryness in stainless steel, at approximately 12 degrees Celsius, using a specially selected aromatic yeast.
