Sourced from our Myrrhee vineyard, a classic blend of bottle fermented Chardonnay Pinot Noir aged on its lees for 12 months. A Subtle creamy aroma followed by distinct lemon/ citrus fruit flavours with dry crisp finish to the palate. A wine for celebrations.
The free run parcels of each variety; 55% Chardonnay and 45% Pinot Noir, were blended together prior to a cold co-fermentation around 12c in tank. The finished base wine was fined using skim milk to remove any harsh phenolics and then sent off to be Tiraged and fermented in the bottle in the traditional Method Champenoise style. The sparkling wine was then aged on its lees
for 12 months.
