Winemaking
Fermented cold at 12 - 14C in stainless steel. 6 months lees contact.
Viticulture
The grape variety is a mutation of Pinot Noir, and the small tight bunches when ripe are an attractive blue/grey colour, hence the Italian term; Grigio (grey)or in French; Gris. An early ripening variety that requires gentle handling to minimise the extraction of colour from the skins. It produces a soft and gentle wine that has wonderful finesse and substance.
