Sam Miranda Sauvignon Blanc 2016

The Wine
Classic varietal flavours of subtle green apple and Passionfruit with a crisp dry palate. The wine was left on lees for 6 months to add texture to the palate and a lingering mouth feel. A style that is well suited to spicy Asian meals or cold meat salads.

Winemaking
The fruit was crushed and destemmed, chilled, and the free-run and very gentle juice pressings were separated, settled overnight and the clean juice fermented to dryness in stainless steel, at approximately 12 degrees celsius. The wine was left on lees for 6 months to add texture to the palate and a lingering mouth feel. A style that is well suited to spicy Asian meals or cold meat salads.

Viticulture
Grown on the North Eastern facing slopes of the upper King Valley at the base of Powers Lookout. Double wire trellising and a split canopy ensure optimal light penetration to help the fruit develop ripe varietal flavours.
