Sam Miranda Semillon 2010
Almost colourless, the slightly straw tinge reflects the very clean, crisp and delicate nature of this wine. As a young wine there are subtle citrus aromatic notes, and very obvious fresh lemon flavours and lingering acidity on the palate. As the wine ages, it should develop more complexity, with hints of honey and toast and a richer, fuller palate.
The fruit was crushed and destemmed, chilled, and the free-run and very gentle juice pressings were separated, settled overnight and the clean juice fermented to dryness in stainless steel, at approximately 12 degrees celsius, using a specially selected citrus aromatic yeast.
